A coffee tamper is an essential tool for crafting espresso, primarily used to compact coffee grounds into a uniform puck for optimal extraction. Its core functions can be summarized in three key aspects:

1. Adjusting Density: After dosing ground coffee into the portafilter, untamped grounds contain air pockets. The tamper applies vertical pressure (typically 30lbs/13.6kg) to eliminate voids, creating consistent density. This directly determines water flow rate - insufficient density causes fast channeling (under-extracted sourness), while excessive compression leads to choked flow (over-extracted bitterness).
2. Preventing Channeling: Uneven tamping creates low-resistance paths for water, causing localized over/under-extraction. Professional baristas often use self-leveling tampers with built-in pressure calibration and micro-articulation bases to achieve sub-millimeter flatness. Premium models feature ergonomic weight distribution (400-600g) and tapered edges matching exact portafilter dimensions (e.g., 58mm), eliminating edge gaps.

The threaded shape of the bottom can leave a threaded shape on the coffee powder, which is conducive to the extraction, the same time, the coffee powder has a larger contact area with the running water, so that the extraction occurs, you can retain a better coffee flavor
