Even Compression of Coffee Grounds
After grinding, coffee grounds often have uneven density and clumps. The tamper applies vertical pressure to form a uniform coffee puck, ensuring consistent water flow and preventing channeling (water bypassing dense areas, leading to uneven extraction).
Controlling Extraction Pressure
Tamping pressure affects puck density. Insufficient pressure (loose puck) causes fast flow (under-extraction), while excessive pressure (overly dense) slows flow (over-extraction).
Ideal pressure: 15-20 kg (beginners can practice with calibrated tampers).
